Tomato Chicken

If your like me, your life is CRAZY some days. I have 14 month old twins, and sometimes I don’t even have time to shower until my husband gets home at 4pm. Some days I can’t put one of my kids down because they constantly need mommy to cuddle or love on them. It’s those days that dinner goes out the window. Heck, lunch too! The only thing you have time for is to throw a PB&J in front of your kids and husband, and you, mom, you get to enjoy a whole carton of chocolate ice cream in the corner of your laundry room because clothes still need to be folded.

THOSE DAYS SUCK! It’s those kinds of days that call for a simple easy dinner that you can just throw into the oven, and forget about for 45 minutes, and in those 45 minutes GO FOLD THOSE CLOTHES GIRL! This dinner is TOMATO CHICKEN. My mother in law introduced me to it, and it is LITERALLY one of the easiest dinners I have ever made. Two ingredient dinner. It’s one of my favorites too, and perfect for a chilly Fall or Winter day!

Prep Time: 10 min Baking Time: 45 min Servings: 3

  • 3 Chicken Breasts
  • 2 or 3 14.5oz cans Italian Style Diced Tomatoes


  1. Preheat oven to 375°F.
  2. Place chicken breasts in glass baking pan. (season to taste)
  3. Pour cans of tomatoes over chicken breasts.
  4. Cover with foil, and place pan in oven. Bake for 45 minutes or until chicken reaches 165°F.

I pair the chicken with white rice, and corn. I pour the delicious tomatoes and juices over the rice. YUM! My kids love it, I love it, and it’s super easy to make! Especially for a busy mom, a working mom, or someone who just wants to make something quick and easy!
